Production Details

Gently whole cluster pressed, cold settled, fermented in a stainless-steel tank, no malolactic fermentation. No cooperage - 100% stainless steel.

We use an innovative low temperature vacuum distillation process to remove the alcohol while preserving 100% of the natural aromas and flavors from the original wine. The acidity, sweetness and tastes change slightly and as the alcohol is removed.  We dilute the wine with water to compensate for alcohol lost and add natural flavors to complement the existing flavors of the wine.
